    It's a pretty decent BBQ joint.  Cheap on the wallet at lunch time!

     I agree. Other than my own BBQ, I think it is the best on the Island. I have eaten there a lot ove the years. Pizza

     Ok, what do you do to make a Great brisket, mine are always just ok.

     The main ingredient- TIME, and lots of it. There is no way to rush a brisket. Low and slow on the smoker, all day.

     What do you marinade it with and how long?  Bastes and rubs? What wood do you use?  What temp and how long?  Do you flip?   Dont get me wrong my briskets are good, just not great.  I have tried almost everything.

    Marinade the brisket the night before. Dig a pit 18"-24" deep and large enough to easily lay the brisket in. Start a fire, and fill the pit with mesquite. Keep burning the wood until you have a hole full of glowing coals. Shovel out half of the coals.  Cover the coals with a thin layer of dirt. Wrap the brisket in aluminum foil (shiny side in) and lay it on the coals. cover the brisket with a thin layer of dirt. shovel the coals you shovelled out back in. Cover with rest of dirt, and forget abou6t it for 10 to 12 hours.

    Dig out and dig in on the tenderest, juciest brisket you have ever eaten.

    This method also will give you the best turkey you have ever tasted. The hole for turkey has to be a lot bigger,

     Bottle Rocket, I usually don't marinate briskets. but use dry rub. If possible apply it 3 days in advance and let it sit in the fridge. Smoke it on indirect heat. A good rule of thumb is one hour per pound. Keep the temperature around 200 degrees. About half way throught the cooking time, wrap the brisket tightly with foil, and put it back on the fire. And don't EVER stick a fork in it, that just makes a hole for the juices to drain out.

     I think it's the best Bar-B-Que anywhere! The baked potatoes are ok but maybe a bit overcooked!

    The owners are rude, too controlling and treat their employees like crap, by yelling at them in front of other co-workers and customers, underpaying them and ripping them off on their paychecks because they don't know how to add the hours on a time card.  Step-sons and daughter in law all worked for them.  I would add the time cards up for them and then they'd present it to them, only to get yelled at more.  Then they would get falsely accused for being short in the register.  They eventually quit, we no longer go there for anything.  They wouldn't even give the Mayor extra BBQ sauce without charging her extra.

    I have witness the yelling at them.

     

    We used to eat there for years during lunch, but stopped due to the food portions shrinking. Plus everytime I asked for a Slice beef and Sausage link sandwich, they said they do not make combos.

    I would ask what kind of BBQ place does not make combos and was told it was the owners.

    For our BBQ craving we go to Grandprize in Texas City. You cannot beat thier prices and hefty food portions. Plus they make combos. HAHA!
